Liang Pi, with a history that dates back more than 2000 years ago, is one of the most popular street foods in North-West China. Often being referred to as cold skin noodle locally, it is commonly served cold with a complementary savoury and tangy sauce. Unlike regular noodles, Liang Pi is made from wheat starch which gives it an exceptionally chewy texture, making it irresistible for anyone to take another bite.
